The Aji Ayuyo pepper is a Peruvian heirloom pepper which starts off as elongated light purple jellybeans and goes through a colour progression as it ripens. It turns light orange and finally red when fully ripe. The fruits are thick-walled and have a jellybean-like shape. sweet and tangy flavour with a mild zip of heat ranging from 1000 to 2000 Scoville Heat Units (SHU).
